For my daughter’s 7th birthday, I made Sunflower Cupcakes for her to take to school.  My biggest challenge was that there were 25 kids in my daughter’s class.  Muffin pans are 12 cupcakes each.  Oh the dilemma!  So I had 11 leftover cupcakes at home :-(

I feel like I’m cheating a bit by not giving you a recipe for this post.  But sometimes, before I try any recipe from cookbooks, I try to google it and find pictures of other peoples’ attempts and to see if they have any tips to make the job easier.  I got this idea from “Hello, Cupcakes” once again.  I skipped the spearmint leaves for mine.  25 cupcakes is a lot to make overnight so I didn’t even make any effort to cut out leaves.  Hope my pic is helpful!

My daughter’s annual bake sale was last week.  I thought it an excellent opportunity to bake without having to eat it all :-)

I’ve made butterfly cupcakes before.  But this time, I decided to pick a different color — blue, their school color. 

Two tricks I did this time around:  I only made small wings.  The big ones kept falling off last time; i put small chocolate chips under the butteflies with the flat side up at a 30 degree angle.  This helped the wings stay in place.

Wouldn’t it be fun to have many different colors?

Chocolate Rice Cereal (No Baking Required)

Chocolate Rice Cereal  

I love school pot lucks.  I like making foods for the kids.  Unfortunately, nowadays, there are so many things to avoid at school.  Chocolates are not allowed; nuts and nut products are no longer allowed.  I guess lots of kids have deadly allergies to it these days.  It’s banned from both T and Z’s schools. 

Tonight is the last day of T’s Hula class so the instructor arranged a potluck.  I’m taking advantage and made a desert that has chocolate and nuts! 

I decided to bring some Chocolate Rice Cereal.  I chose this because I had so many chocolates left from Easter.  Yes, from April. It hasn’t expired yet and I’m sure they wouldn’t even suspect.

I thought everybody would avoid chocolates at 6PM but nope, it was a hit.  So many food at the pot luck and this is still the one that was eaten first.  Maybe I should’ve brought more than 12.  This took less than 20 minutes to make.  Next time, I’ll buy chocolate-colored baking cups.  You know, like the one they use to wrap gourmet chocolates … I think it would look even better on those.

Recipe:  Chocolate Rice Cereal
Here’s what you’ll need to make this scrumptious treat:

5 Snickers with almonds (4 chopped)
4 tbsp unsalted butter*
8-10oz milk chocolate**
3 cups rice cereal***

1. Line up cupcake liners on 12-muffin pan
2.  Melt butter and 4 snickers over medium heat on a medium pan
3.  Put in rice cereal and mix well.
4.  After mixing, distribute evenly on the muffin cups making sure it’s just to the top.
5.  Melt milk chocolate and pour on top of each muffin cup over rice cereal.
6.  Use the 5th snickers bar to top each muffin
7.  Refrigerate until it sets (about 15 minutes)

* Or salted (if you don’t have unsalted) but unsalted for better results
** Use any milk chocolate at your disposal and melt it … the point is to top your rice cereal with melted chocolate.
***  Rice Krispies has HCFS.  Try to use Erehwon

Butterfly Cupcakes

This is actually a project I made for my daughter’s birthday party at school.  I took the design from Hello, Cupcake!: Irresistibly Playful Creations Anyone Can Make.  I used Arrowhead Mills Vanilla Cake Mix Organic for the cupcakes (I made some out of chocolate mix as well).  For the topping, I used Dr. Oetker Organics Vanilla Frosting.

This is my first attempt at making decorative cupcakes so I was more focused on aesthetics.  They provided a template of a butterfly but after awhile, I ended up drawing it free hand.  It was a hit!  I got a lot of compliments and I made my daughter proud!
